Simple Supper Recipes: Summer Alfredo Pasta

With the kids back in school, mom’s are wondering…when will I have time to get dinner done. Between homework, sports, and other weekday activities, CSRA Kids understands a simple meal is best. Take a look at this simple recipe that is sure to please everyone at home. This twist on the classic Fettuccini Alfredo packs in extra vegetables and a ton of flavor!

Summer Alfredo Pasta

Ingredients

2 tbsp Olive Oil
¼ onion, diced
½ bell pepper, diced
2 cloves of garlic, crushed
1 cup (or one large) fresh diced tomato
¼ cup Butter (1/2 stick)
Salt and pepper, to taste
1 jar Alfredo sauce
1 package of fettuccini – prepared to package instructions
¼ cup fresh chopped parsley
Red pepper flakes
Optional Ingredients: Grilled shrimp or shredded chicken

How to Prepare

Sautee onion, bell pepper, and tomato in olive oil over medium heat for two minutes.

Add butter and garlic.  Season with salt and pepper then reduce heat to medium low.
Once butter is melted, cover and simmer, stirring occasionally, until vegetables are soft and cooked thoroughly.  

Whisk in heavy cream and parmesan cheese.
Continue stirring until cheese is melted and incorporated well into the sauce.  

Reduce heat to low, cover and simmer for 5 minutes.
Remove sauce from heat and toss with pasta.
Let pasta stand for 2 minutes to allow sauce to thicken.
Garnish with fresh parsley and red pepper flakes.
For a protein boost, top with shredded chicken or grilled shrimp.  Enjoy!
